The Ayurvedic drink Tandai is made from milk, almonds and spices. This drink has a whole range of useful properties. This cooling and tonic drink in India is prepared for holidays and weddings, and served to beautifully decorated guests. The recipe for making the drink has come down to us from ancient Ayurvedic treatises, and has been preserved in the form in which it was developed by ancient scientists of Ayurveda.

To cook Tandai, you will need the following ingredients:

• Liter of milk
• Three glasses of water
• Half a cup of sugar
• 1 tsp. Anise (seeds)
• A tablespoon of almonds
• Ten black peppercorns
• Several veins of saffron
• ½ ч. л. семян кардамона
• A tablespoon of dried watermelon pits
• A teaspoon of poppy
• 1/3 cup rose petals
The method of preparing the drink is as follows:
• Boil the milk first and then chill until cold

• Place anise, almonds, peppers, watermelon seeds, poppy seeds and rose petals in the same container
• Pour this mixture with 2 cups of water and infuse for an hour
• Then drain the water and grind the spices in a blender. The mixture should be paste-like, homogeneous, for this add a small amount of water.
• Add a cup of water to the resulting paste. Mix well and strain. Carefully squeeze out all the liquid.
• Add cardamom, sugar and saffron to the resulting liquid and stir thoroughly.
• Add cold boiled milk to the juice and cool it all in the refrigerator.
Serve the drink cool, poured into tall glasses. Tandai can be garnished with crushed almonds and/or mint leaves. Tandai is good in the hot season as a tonic and refreshing drink.
