Eggplant and pepper appetizer recipe.

To prepare an eggplant and pepper snack, you will need the following products and components:

  • one kilogram of eggplant;
  • one kilogram of red fleshy bell peppers (or gamba);
  • 0.5 kilograms of onions;
  • 1.5 kilograms of tomatoes;
  • garlic;
  • dill, finely chopped;
  • salt and pepper at your discretion.

Preparation of eggplant and pepper appetizers.

Cut the eggplant into small rings of about 3 mm. Cut the bell pepper lengthwise into strips and lightly fry in vegetable oil. Remove the skin from whole tomatoes and cut into wedges, add salt and pepper to your liking.
Cut the onion into thin rings and put in apple cider or regular vinegar to marinate for 10 minutes. Fold everything in layers, in the sequence as indicated below, sprinkle each layer with salt.
