Today, recipes for industrial cooking of various varieties of boiled sausages are unified and many unscrupulous manufacturers, in pursuit of profit, add various kinds of chemicals in the production of sausages, which give the sausage an attractive appearance, but not taste. And if you do not have a particular desire to buy a sausage in the store, which contains a large number of different preservatives and chemical additives, then homemade sausage can be a great alternative, which you can easily cook yourself. One of the main components of any sausage is meat, which can be of different types and varieties, for example: beef, pork or other types of meat. You can also use ready-made minced meat, but it must be very well chopped in a blender or in a meat grinder.
To cook boiled chicken fillet sausage at home, you need to prepare the following ingredients:
- Chicken fillet -500 grams
- Cream - 200 milliliters
- Semolina - 100 grams
- Egg white - 2-3 pcs.
- Smoked ham - 150-200 grams
- Salt – 1 teaspoon
- Ground black pepper – 1/2 teaspoon
- Garlic – 1-2 cloves
- Red paprika - 1 teaspoon
- Hot paprika – 1/2 teaspoon
- Ground cumin – 1/2 teaspoon
The method of cooking boiled sausage is very simple - place all products and spices, except for smoked ham, in a blender, and grind thoroughly until a homogeneous paste-like mass is obtained. Cut the ham into small cubes no larger than half a centimeter. Add the sliced ham to the mixture in the blender and spoon everything well again so that the ham pieces are evenly distributed in the minced meat.
Put the resulting mass on a prepared sheet of food parchment, and folding the paper as tightly as possible, give the mixture the shape of a sausage. Make several layers of parchment and be sure to twist its ends. Pull the resulting sausage with threads or twine and place it in a saucepan, pour cold water, bring to a boil and cook over medium heat for half an hour. Cool the cooked homemade cooked sausage and put it in the refrigerator.
In order to give homemade boiled sausage the already familiar pink color, then in the process of cooking it, you need to add food coloring. The best natural and healthy coloring for sausage is freshly squeezed juice from raw beets. The resulting juice must be fixed with two or three tablespoons of strong alcohol, for example: vodka or cognac. To give the sausage a beautiful shape, you can use a sleeve for baking meat (cling film) or even a plastic bottle.
