Store the beans in a dark place in a glass jar with a ground lid. Also, the level of humidity affects the safety, humidity should be minimal, otherwise the grains may become damp or moldy may start in them.
Before cooking, beans and peas are well sorted and washed several times, always in cold water.
It is no secret that we often refuse to cook legumes, this is because of the long cooking, in order for the legumes to cook faster, they must be soaked in water overnight. When soaking, it is important to remember that the water should not be higher than 15 degrees, otherwise the beans or peas may turn sour.
Here are some tips for cooking legumes. After you have soaked the beans, then this water should be drained and new water should be collected, it should be two to three times the number of legumes, it is also better to cook them in cool water, and salt and other spices should not be added. The readiness of the legumes can be checked as follows, you can press the grain with a fork and if it has become soft, then the dish is ready. Usually, the cooking time is 1-1.5 hours for peas, and 1-2 hours for beans.

Legumes are good as independent dishes, then the grains are seasoned with tomato sauce, and as a side dish for vegetables or meat. Vegetarians often prepare cutlets from legumes, immediately after cooking, without cooling, pass the grains through a meat grinder or blender, but so that the cutlets do not turn out dry, you can add a piece of pork fat when cooking them.
